NEW YORK (AP) — David Bouley, the award-winning and frenetic chef whose idiosyncratic haute cuisine and crusty breads pleased critics and the public during a career chasing sleek deliciousness, has died. Bouley died of a heart attack Monday at his home in Kent, Connecticut, according to Lisa Queen, his literary agent. Other restaurants he worked in include Danube, Bouley Bakery, Upstairs at Bouley, Bouley at Home, Secession and Brushstroke, a collaborative effort with the Tsuji Culinary Institute in Osaka, Japan. Danube and Bouley Bakery each earned two Michelin stars. The restaurant Bouley — which famously had a foyer filled with apples — closed in 2017 after 30 years and several location changes, earning a three-star from the New York Times the year previously.

In 1994, he became the first Black chef to win the James Beard Foundation's Best Chef Award. The famed chef touched on his ideology during a 1994 interview shared on YouTube by the African American Chefs Hall of Fame. Patrick's remarks weren't a knock against Black American cuisine. Instead, it was an unapologetic declaration that Black chefs can't — and won't — be pigeonholed. Black chefs at that time were fighting stereotypes that they could only excel at making soul food.

While many in the world of cocktails are familiar with Tom Bullock, renowned for his juleps and long considered the first African American bartender to publish a cocktail manual, fewer know the work of Atholene Peyton, a home economics teacher whose 1906 “Peytonia Cook Book” predated Bullock’s by a decade. Peyton’s story is just one told in Toni Tipton-Martin’s new book, “Juke Joints, Jazz Clubs and Juice: Cocktails From Two Centuries of African American Cookbooks,” a chronicle of the ways in which Black people contributed to American cocktail culture. “This is really a work of investigative journalism. It’s not just a book of cocktails,” said Ms. Tipton-Martin, a James Beard award-winning author of several cookbooks and the editor of Cook’s Country magazine, who pored through centuries’ worth of published recipes for her new work. The book is a continuation of her 2015 book, “The Jemima Code: Two Centuries of African American Cookbooks,” which credited Black women for much of the country’s culinary history, and her 2019 follow-up, “Jubilee: Recipes From Two Centuries of African American Cooking.”

Jamila Robinson, a top editor at The Philadelphia Inquirer, will be the next editor in chief of the food magazine Bon Appétit. Ms. Robinson is the assistant managing editor for food and culture at The Inquirer, which she joined in 2020. She was previously an editorial director at Atlantic Media and has also worked at the USA Today Network, The Atlanta Journal-Constitution and The Detroit Free Press. Ms. Robinson recently served as chair of the James Beard Foundation’s Journalism Awards Committee and is a chair for the World’s 50 Best Restaurants annual list. Anna Wintour, Condé Nast’s chief content officer and global editorial director of Vogue, described Ms. Robinson in a statement as “a community builder and a major editorial talent,” as well as “an absolute star in the kitchen.”

Thai food became so popular among Americans that the Thai government took notice. And Thai American chefs like Pichetrungsi are continuing to defy stereotypes and misconceptions of what constitutes Thai food. Lab-grown meat, also known as cultured or cultivated meat, costs about $17 a pound, making it unaffordable for most consumers. Lab-grown meat has more in common with meat produced at a slaughterhouse than you might think. Some critics of the meatpacking industry have gotten excited about the idea of lab-grown meat as an alternative to Big Chicken. Tyson Foods, the largest meatpacking company in the US, was an early investor in the plant-based meat company Beyond Meat and has put money in Upside Foods. Before celebrating cultured meat as a victory for anyone, surely more studies are needed to explore this point further.

Business leaders are resorting to desperate measures to entice workers back to the office, my colleague Emma Goldberg reported recently. “It’s been three years of scattershot plans for returning to in-person work — summoning people in, not really meaning it, everybody pretty much working wherever they pleased,” she wrote. One idea I haven’t seen floated is to offer screenings of the series “The Bear,” whose second season was released in June on Hulu. When it debuted last year, “The Bear” was praised for its authenticity, for depicting the chaos of a real restaurant kitchen. Hands are burned, fingers slashed; the pace of the prep rush turns the kitchen staff into sweating, shouting bodies, meat cooking meat.” Hardly a convincing argument for in-person work.

James Beard Award 2023 winners announced

The awards have been presented in the Windy City since 2015 and are set to remain there through 2027. Like last year, much of the 2023 show was focused on showcasing the new push for greater diversity. The James Beard Foundation has been mired in controversy over the past few years. The James Beard Foundation presented its coveted culinary awards for 2023 in Chicago on Monday night, with the top awards going to Rob Rubba of Oyster Oyster in Washington, D.C., as outstanding chef and to Friday Saturday Sunday in Philadelphia as outstanding restaurant. Reflecting the awards’ growing clout, Mayor Brandon Johnson of Chicago and Gov. J.B. Pritzker of Illinois appeared live onstage, and Secretary of State Antony Blinken, in a video, praised the soft power of culinary diplomacy, citing the Beard-award-winning chef Edward Lee’s Maryland crab cakes with gochujang vinaigrette, which were served at a recent state dinner. In some ways, the gala was the eye in a recent storm of controversies about the group’s process and priorities. After an internal audit, the awards process was retooled to reward not only culinary excellence, but equity, leadership, sustainability and community-building.

The chef Sam Fore received an ominous voice mail message this month from an unknown number. The caller identified himself as a private investigator working for the James Beard Foundation. Later that day, Ms. Fore found herself on a Zoom call, answering questions from him and another man. Ms. Fore is among the first subjects of an investigatory process created in 2021 as part of that overhaul. But in many ways she is the kind of chef the retooled awards are meant to recognize more fully.

A Better Shrimp Cocktail Is Closer Than You Think

The best advice for making shrimp cocktail I ever learned came from the great chef and cookbook author James Beard. He was adamantly against it. Not the shrimp, of course, which he adored, but rather the “overpowering red menace known as cocktail sauce,” as he wrote in his classic cookbook, “The New James Beard.”
Emily Meggett, a Southern home cook who never measured her ingredients or used recipes but became one of America’s most important Gullah Geechee cooks and last year published a best-selling cookbook on Gullah Geechee cuisine, died on Friday at her home in Edisto Island, S.C. She was 90. Mrs. Meggett had been cooking for nearly 80 years before “Gullah Geechee Home Cooking: Recipes From the Matriarch of Edisto Island,” was published in April of last year — the first high-profile cookbook centered on the food of the descendants of the enslaved people of the coastal South. “She left us with a lifetime of work that was overlooked and undervalued for years,” said Kayla Stewart, the book’s co-author. (Ms. Stewart has written for The New York Times.) “She really moved the needle in terms of how we’re talking about Gullah Geechee cuisine and culture.”“Gullah Geechee Home Cooking” became a New York Times best seller last July, and on Wednesday it was nominated for a 2023 James Beard book award in the category of U.S. Foodways.
